Virginia got her Caribbean feast off to a start with a salt cod and prawn medley on Come Dine With Me Huddersfield
Discard the soaking water from the cod and place the fish in a pan. Cover with cold water and boil for 10 minutes.
Meanwhile heat some oil in a saucepan and fry the onion, pepper, herbs and black pepper for 2-3 minutes.
Drain the cod and flake the fish into the onion pan. Add the tomatoes, fish seasoning, hot pepper sauce and prawns and simmer for 1 minute.
Slice the melon and avocado and arrange on serving plates. Sit the seafood mixture on top and serve garnished with lemon.
