Island seafood recipe

Virginia got her Caribbean feast off to a start with a salt cod and prawn medley on Come Dine With Me Huddersfield

Serves 5


  • 500g salt cod, soaked in cold water overnight
  • 4 tbsp olive oil
  • 1 large red onion, thinly sliced
  • 1 red pepper, diced
  • ½ tsp dried mixed herbs
  • ½ tsp ground black pepper
  • 6 small plum tomatoes, diced
  • ½ tsp fish seasoning
  • 1 tsp hot pepper sauce
  • 500g cooked peeled prawns
  • 1 cantaloupe melon
  • 2 avocados
  • Lemon wedges


  1. Discard the soaking water from the cod and place the fish in a pan. Cover with cold water and boil for 10 minutes.

  2. Meanwhile heat some oil in a saucepan and fry the onion, pepper, herbs and black pepper for 2-3 minutes.

  3. Drain the cod and flake the fish into the onion pan. Add the tomatoes, fish seasoning, hot pepper sauce and prawns and simmer for 1 minute.

  4. Slice the melon and avocado and arrange on serving plates. Sit the seafood mixture on top and serve garnished with lemon.
