Zoe bakes a Mediterranean loaf to accompany her pasta starter on Come Dine With Me Doncaster
Makes 1 loaf
Sieve the flour into a bowl and mix in the yeast and salt. Add the wet ingredients and knead until smooth and shiny, about 8-10 minutes.
Place in a lightly oiled bowl, cover with oiled cling film and leave in a warm place until doubled in size.
Knock the air out of the dough, squashing the olives and tomatoes in. Leave for a further 1 hour to rise.
Preheat the oven to 180°C/gas mark 4. Bake for 30 minutes then cool on a wire rack.
