Escovitch fish recipe

It's authentic Carribean cuisine from Lenny Irving on Come Dine With Me Belfast

Serves 5

Ingredients

  • Olive oil, for frying
  • 5 boneless white fish fillets
  • 2 onions, chopped
  • 2 green peppers, chopped
  • Sprigs of thyme
  • 1 Scotch bonnet pepper, deseeded and sliced
  • Splash of vinegar

Method

  1. Heat some oil in a frying pan and fry the fish for 2-3 minutes each side. Lift out of the pan and set aside.

  2. Add a little more oil and fry the onion, pepper, thyme and Scotch bonnet pepper until soft. Add a dash of vinegar and stir through.

  3. Transfer to an ovenproof dish, sit the fish on top and bake for 5 minutes.

  4. Serve with a grated carrot salad.
