1. Melt the butter and sugar in a saucepan with the Calvados. When the sugar has dissolved add the apples and leave to caramelise, turning once or twice.
2. Heat the croissants in an oven or grill then split open, spoon on the apple mixture and top with a scoop of ice cream. Serve immediately.
