Dice the courgettes, setting one aside for later. Heat the oil in a large saucepan and gently fry the remaining 4 courgettes and the garlic until soft.
Add the stock and parmesan to the pan, then transfer everything to a liquidiser and blend until smooth.
Return the soup to the pan, add the cream and season to taste.
Finely dice the remaining courgette, add this to the pan and simmer for 10 minutes.
Ladle into bowls and serve with a little more parmesan.
