Chorizo soup
Lorraine serves up this hearty chorizo soup as one of her starters on Come Dine With Me West Lancashire

Serves 5

INGREDIENTS

  • 2 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 200g chorizo, chopped
  • Handful spinach leaves
  • 400g can tomatoes
  • 400g can chick peas
  • 800ml stock
  • 2-3 hard boiled eggs, finely shredded

Method

  1. Heat the oil in a saucepan and gently sweat the onion until soft. Add the garlic and chorizo and cook for another few minutes then add the spinach, tomatoes, chick peas and stock and bring to the boil. Simmer gently for 30-40 minutes then blitz until smooth and garnish with the egg.
