Louise rounded off her evening with an indulgent trifle of chocolate and boozy cherries on Come Dine With Me Leeds
Pour the cooled coffee into a jug and stir in the cherry brandy. Arrange half the trifle sponges in the bottom of a serving dish and pour over half the coffee mixture.
Put the mascarpone into a separate bowl with the cream and sugar and mix well. Spread half the mascarpone mixture over the sponge then top with half the cherries. Arrange the remaining trifle sponges on top and pour over the remaining coffee mixture and remaining cherries.
Finish with a layer of the mascarpone mixture and scatter over the grated chocolate. Leave to chill in the fridge, covered, for 2 hours.
