Melt the butter in a frying pan and gently wilt the spinach.
Next poach the duck eggs in gently simmering water for 1-2 minutes.
Meanwhile fry the asparagus in a hot, dry frying pan until golden and tender.
Arrange the spinach in a nest shape and sit the egg in the centre. Arrange the asparagus around the edge and drizzle with hollandaise. Sprinkle with pine nuts and serve.
