A nesting duck in asparagus reeds recipe

Female impersonator Marcus Hunter-Neill steals the limelight with this quacking starter on Come Dine With Me Belfast

Serves 5

Ingredients

  • 400g spinach
  • 5 duck eggs
  • 3-4 bunches asparagus, trimmed
  • Hollandaise sauce
  • Handful pine nuts, toasted

Method

  1. Melt the butter in a frying pan and gently wilt the spinach.

  2. Next poach the duck eggs in gently simmering water for 1-2 minutes.

  3. Meanwhile fry the asparagus in a hot, dry frying pan until golden and tender.

  4. Arrange the spinach in a nest shape and sit the egg in the centre. Arrange the asparagus around the edge and drizzle with hollandaise. Sprinkle with pine nuts and serve.
