Upside down pudding recipe

Everything went topsy-turvy with Janet Cripps dessert on Come Dine With Me Folkestone and Dover

Serves 4

Ingredients

  • 2 tbsp golden syrup
  • 425g can pineapple rings, drained and juice reserved
  • Handful of glace cherries and crystallised ginger
  • 110g butter
  • 110g caster sugar
  • 2 eggs
  • 170g self-raising flour
  • 1 tsp ground ginger

Method

  1. Preheat the oven to 180°C/gas mark 4. Grease a cake tin and line the bottom with greaseproof paper.

  2. Warm the syrup and spread into the bottom of the tin, then arrange the pineapple, cherries and ginger on the bottom of the tin.

  3. In a bowl beat the butter and sugar until pale and fluffy. Mix in the beaten eggs then fold in the flour, ground ginger and 1-2 tablespoons of the pineapple juice, enough to get a soft dropping consistency.

  4. Pour the mixture over the fruit then bake for 45 minutes.

  5. Turn the pudding out onto a serving dish and serve with custard or cream.
