Preheat the oven to 200°C/gas mark 6. Place the tuna steaks in a bowl and cover with the soy sauce, garlic, olive oil and sesame oil.
Parboil the potatoes for 5 minutes then drain well. Toss in a roasting tray with the duck fat and salt and pepper. Roast for 40-50 minutes, turning every 10 minutes.
Make the cheese sauce with the milk, according to packet instructions. Place the broccoli in an ovenproof dish and cover with the sauce. Scatter over the parmesan and cover with grated cheese and bake for 40 minutes until the broccoli is tender.
To cook the tuna, heat a little oil in a frying pan and fry the tuna steaks for 2-3 minutes each side. Serve with the potatoes, broccoli cheese and seasonal vegetables.
