With apple, lentils and spices, Nicola's white sweet potato soup brought some Caribbean cool to her evening on Come Dine With Me Bedfordshire, Buckinghamshire and Hertfordshire
Cook the curry powder in a hot frying pan for 2 minutes, then add the olive oil.
Once the oil is hot add the onion, apple, garlic, coriander stalks and ginger, and season with salt and pepper. Leave to cook for 5 minutes.
Add the sweet potato, vegetable stock, lentils and milk, and season to taste, then simmer for 20 minutes.
Once the sweet potato is tender, blend the soup to a purée.
Add the chopped coriander leaves and the juice of 1 lime. Season to taste and serve garnished with cream, croutons and coriander.
