Slow cooked beef stew and dumplings

Sarah slow-cooked this stew for extra flavour on Come Dine With Me Great Yarmouth

Serves 4

Ingredients

  • 2 tbsp oil
  • 1kg diced rump steak
  • 75g flour
  • 2 tsp dried parsley
  • 2 tsp dried thyme
  • ½ swede, cut into chunks
  • 150g mushrooms
  • 3 carrots, cut into chunks
  • 3 beef stock cubes
  • 1 tsp marmite
  • Splash of Worcestershire sauce
  • 2 tsp tomato purée


For the dumplings

  • 150g flour
  • 2 tsp baking powder
  • Pinch of salt
  • 1 tbsp margarine
  • 120ml milk

Method

  1. Heat the oil in a large frying pan. Brown the beef then stir in the flour, herbs and some black pepper. Add the swede, mushrooms, carrots, stock cubes, marmite and Worcestershire sauce, then enough hot water to cover. Bring the mixture to the boil.

  2. Pour the mixture into a slow cooked and add the tomato purée. Cook for 3-4 hours until meltingly tender.

  3. For the dumplings, in a bowl mix together the flour, baking powder and salt. Add the margarine and rub together until the mixture resembles breadcrumbs, then work in the milk. Shape the dough into balls and drop into the stew about 20-30 minutes before you wish to serve.

  4. Serve the stew and dumplings with steamed new potatoes and cabbage.
