Scallops with salsa verde recipe

Chris Kerr served pancetta-wrapped scallops with a classic herby sauce on Come Dine With Me Aberdeen

Serves 4

Ingredients

  • 3 shallots, finely chopped
  • 2 tsp capers
  • 4 anchovy fillets, finely chopped
  • Handful of basil, chopped
  • Handful of parsley, chopped
  • 1-2 cloves garlic, chopped
  • Juice of 1 lemon
  • Olive oil
  • 12 scallops
  • 12 slices pancetta

Method

  1. For the salsa verde, mix the shallots, capers, anchovies, basil, parsley, garlic and lemon juice. Add enough olive oil to get a sauce.

  2. Wrap the scallops in pancetta and thread onto skewers. Brush with oil then griddle for 3 minutes each side.

  3. Arrange on serving plates and serve with the salsa verde.
