Sausage plait recipe

Matt's main was his uncle's recipe for sausage meat plaited in pastry on Come Dine With Me Taunton

Serves 4


  • 300g plain flour
  • 150g butter
  • 500g sausage meat
  • 2-3 hard-boiled eggs
  • 1 egg, beaten


  1. Preheat the oven 180°C/gas mark 4. In a bowl rub together the butter and flour, then add enough water to bring together into a dough. Wrap in cling film and chill for 30 minutes.

  2. On a floured surface roll the pastry out to a large rectangle about the thickness of a pound coin.

  3. Lay the meat down the centre of the pastry in a long sausage, wrapping around the boiled eggs. Slice the exposed edges of the pastry into 2cm wide strips, then plait over the meat.

  4. Put the plait on a tray, brush with beaten egg and bake for about 1 hour until golden and cooked through.
