Fish and chips recipe

Sally surprised her guests with a main more classy than the name suggested on Come Dine With Me Burnley

Serves 4

Ingredients

  • 5 identical size cod loins
  • Handful of flour
  • 1 tsp cayenne pepper
  • 4 tbsp olive oil
  • Mushy peas, to serve


For the chips

  • 4 sweet potatoes, cut into wedges
  • Olive oil


For the salt and vinegar butter sauce

  • Knob of butter
  • 1½ onions, finely chopped
  • 200ml white wine
  • 200ml double cream
  • 110g butter
  • ½ tsp malt vinegar


For the tomato sauce

  • 2 x 400g cans chopped tomatoes
  • 50ml white wine vinegar
  • 1½ tbsp chopped fresh tarragon
  • 2½ tbsp brown sugar

Method

  1. Preheat the oven to 220°C/gas mark 7. Pat the potatoes dry and toss with some olive oil. Season with salt and pepper and bake for 20-25 minutes, turning once.

  2. For the butter sauce, heat the butter and gently fry the onion until soft. Once soft, set aside a third for the tomato sauce.

  3. Add the wine to the remaining onions, increase the heat and reduce by half. Then add the cream and reduce by half again.

  4. Strain the sauce into a clean pan and whisk in the butter. Season with salt, then add the vinegar to taste.

  5. For the tomato sauce, drain the tomatoes and place in a saucepan with the white wine vinegar, tarragon and brown sugar. Season with salt and pepper and cook until dry.

  6. To cook the fish, toss each piece in flour seasoned with salt and the cayenne pepper. Heat the oil in a frying pan and pan-fry the fillets for 2-3 minutes each side.

  7. Pour the butter sauce into small serving dishes and serve with the fish, tomato sauce and mushy peas.
