For the salt and vinegar butter sauce
For the tomato sauce
Preheat the oven to 220°C/gas mark 7. Pat the potatoes dry and toss with some olive oil. Season with salt and pepper and bake for 20-25 minutes, turning once.
For the butter sauce, heat the butter and gently fry the onion until soft. Once soft, set aside a third for the tomato sauce.
Add the wine to the remaining onions, increase the heat and reduce by half. Then add the cream and reduce by half again.
Strain the sauce into a clean pan and whisk in the butter. Season with salt, then add the vinegar to taste.
For the tomato sauce, drain the tomatoes and place in a saucepan with the white wine vinegar, tarragon and brown sugar. Season with salt and pepper and cook until dry.
To cook the fish, toss each piece in flour seasoned with salt and the cayenne pepper. Heat the oil in a frying pan and pan-fry the fillets for 2-3 minutes each side.
Pour the butter sauce into small serving dishes and serve with the fish, tomato sauce and mushy peas.
