Boil the new potatoes until tender then drain and keep warm.
Meanwhile heat a frying pan until hot then fry the chorizo and black pudding until golden and crisp. Remove with a slotted spoon and keep warm.
Add the scallops to the pan and fry for 2-3 minutes. Toss with the black pudding, chorizo and potatoes and serve with the rocket.
