Roasted peaches with amaretto biscuits and wild berry coulis recipe

Cathie finishes on a fruity note with roasted peaches for dessert on Come Dine With Me North West London

Serves 4


  • 250g tub mascarpone cheese
  • 250g amaretti biscuits, crushed (reserve some whole to decorate)
  • 4 ripe peaches
  • Splash amaretto liqueur
  • Ice cream, to serve

For the coulis

  • 150g fresh raspberries
  • 2-3 tbsp sugar
  • 2 tbsp clear honey
  • Drop of any red liqueur


  1. Preheat the oven to 180°C/gas mark 4. Mix the mascarpone cheese in a mixing bowl with the crushed amaretti biscuits.

  2. Halve the peaches and remove the stones. Pour a little amaretto into the centre of each peach then top with the mascarpone mixture. Bake for 30-40 minutes until soft.

  3. Meanwhile blitz the raspberries until smooth then simmer gently with the sugar and splash of water. Add the honey and liqueur and boil for a few minutes.

  4. Serve the coulis drizzled over the peaches, with ice cream and amaretti biscuits to decorate.
