Cathie finishes on a fruity note with roasted peaches for dessert on Come Dine With Me North West London
For the coulis
Preheat the oven to 180°C/gas mark 4. Mix the mascarpone cheese in a mixing bowl with the crushed amaretti biscuits.
Halve the peaches and remove the stones. Pour a little amaretto into the centre of each peach then top with the mascarpone mixture. Bake for 30-40 minutes until soft.
Meanwhile blitz the raspberries until smooth then simmer gently with the sugar and splash of water. Add the honey and liqueur and boil for a few minutes.
Serve the coulis drizzled over the peaches, with ice cream and amaretti biscuits to decorate.
