Portobello mushrooms with spicy lamb meatballs recipe

Mark kicked off with meatball stuffed mushrooms on Come Dine With Me Hull

Serves 4

Ingredients

  • 4 Portobello mushrooms
  • 4 tsp pesto
  • 200g goat’s cheese
  • Olive oil


For the meatballs

  • 450g lamb mince
  • ½ onion, finely chopped
  • 1 clove garlic, chopped
  • Fresh rosemary, parsley, mint and thyme
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • ½ tsp hot chilli powder
  • ½ egg yolk


For the sauce

  • 700g passata
  • ½ tsp chilli powder


To serve

  • Parmesan shavings
  • Balsamic vinegar
  • Rocket leaves

Method

  1. Preheat the oven to 180°C/gas mark 4. Peel the mushrooms and remove the stalks. Place a teaspoon of pesto in each then cover with goat’s cheese. Place in a baking dish and drizzle with oil, then bake for 15 minutes.

  2. For the meatballs, place the mince, onion, garlic, herbs, spices and some salt and pepper in a blender and blitz until smooth. Fold in the egg yolk then shape into small balls and place in an oven dish. Bake for 25 minutes.

  3. For the sauce, place the passata in a saucepan with the chilli powder and simmer for 10-15 minutes.

  4. To serve, place the meatballs on top of the mushrooms and pour over the sauce. Garnish with parmesan shavings and balsamic vinegar and serve with some rocket leaves.
