Pork fillet with apples and cider recipe

Pork medallions in a creamy sauce from Lisa on Come Dine With Me Wrexham

Serves 4


  • 2 pork fillets
  • Fresh sage, rosemary, thyme
  • Sprinkling of paprika
  • Rapeseed oil with garlic
  • ½ red onion, chopped
  • 2 cloves garlic, chopped
  • 2 eating apples, sliced
  • 300ml cider
  • 50ml double cream
  • Seasonal vegetables, to serve


  1. Cover each fillet with the fresh herbs, paprika, salt, pepper and oil and wrap in cling film. Put in the fridge and chill for several hours.

  2. Preheat the oven to 160°C/gas mark 2½. Heat a large frying pan on the hob and seal the pork on all sides. Place the pork loins on a roasting try and place in the oven.

  3. In the same pan, gently soften the onion and garlic then add the sliced apples. Add the cider to the frying pan and keep on low heat.

  4. After 15-20 minutes the pork should be cooked through. Take out of the oven and cover with foil to keep warm whilst it rests.

  5. Stir the cream through the sauce and add more cider if needed. Place a spoon of warmed apple sauce on each plate.

  6. Slice the pork loin in to equal pieces and place on the warm apple sauce. Pour over the cream sauce and serve with seasonal vegetables.
