Mussels in white wine and herbs recipe

Kirkland flexed his mussels in this classy starter on Come Dine With Me Luton

Serves 4


  • 4 tbsp olive oil
  • 2 shallots, roughly chopped
  • 1-2 cloves garlic, roughly chopped
  • Handful of fresh herbs such as coriander, parsley, thyme and basil, roughly chopped
  • 125g butter
  • 150ml white wine
  • 500ml boiling water
  • 1kg mussels, cleaned and debearded
  • French bread, to serve


  1. In a large lidded saucepan heat the oil and sweat the shallots and garlic until soft.

  2. Add the herbs, butter, white wine and water and bring to the boil. Tip in the mussels and cover with a lid.

  3. Steam for 4-5 minutes until all the shells have opened. Discard any mussels that open and serve with warmed French bread.
