Moules mariniere

Jeff Brazier begins his dinner with the seafood classic moules mariniere on Celebrity Come Dine With Me


  • 50g butter
  • 1 small onion, finely chopped
  • 1 small bulb fennel, finely chopped
  • 1 clove garlic, chopped
  • 2 fresh bay leaves
  • 150ml white wine
  • 1kg mussels, washed and de-bearded
  • 100ml single cream
  • Zest of 1 lemon
  • A handful of parsley, roughly chopped


How to make moules mariniere

1. Heat the butter in a deep saucepan large enough to fit the mussels in. When it starts to sizzle add the onion, fennel, garlic and bay leaves and cook gently for 5-6 minutes, or until soft but not coloured.

2. Add the wine and tip in the mussels then cover and turn up the heat. Shake the pan every 30 seconds or so for 3-4 minutes, or until all the shells are opened.

3. Stir in the cream and lemon zest and warm through for a further minute. Divide the mussels between 4 warmed bowls, pour over the pan juices and sprinkle over the parsley before serving.
