Mandy Moo's mini banoffee pie recipe

These individual banoffee treats from Mandy Quayle go down very well on Come Dine With Me Isle of Man

Serves 4

Ingredients

  • 200g digestive biscuits, crushed
  • 125g butter, melted
  • 397g can condensed milk caramel
  • 2 bananas, mashed
  • 250ml double cream
  • 25ml Irish cream liqueur, plus extra to serve
  • Chocolate shavings and chocolate cows, to decorate

Method

  1. In a bowl mix the biscuit crumbs and butter. Press into 4 cooking rings and place in the fridge to set.

  2. Spread the caramel over the bases then spread the mashed bananas on top.

  3. Whip the cream and Irish cream liqueur together then spoon over the banana. Remove the cooking rings, scatter over the chocolate and serve drizzled with more Irish cream liqueur.
