Diane goes for a Jamaican classic for her main course dish on Celebrity Come Dine With Me

Serves 4

Ingredients

• 1 medium chicken, spatchcocked
• Ready-made jerk seasoning

For the rice and peas

• 1 chicken stock cube
• 1 tsp dried thyme or sprigs of fresh thyme
• 1 tbsp dark soy sauce
• ½ tsp hot pepper sauce
• Pinch of salt
• 165ml can coconut milk
• 300g canned red kidney beans
• 500g easy cook long grain rice

METHOD

How to make jerk chicken with rice and peas

  1. Rub the seasoning all over the chicken, wrap in cling film and leave to marinate overnight.
  2. For the rice, in a jug dissolve the stock cube in a few tablespoons of hot water. Add the thyme, soy sauce, hot pepper sauce, salt, coconut milk and kidney beans, including the liquid. Top up the jug with water to reach 1 litre.
  3. Tip into a saucepan and bring to the boil. Add the rice and bring back to the boil. Reduce the heat and simmer very gently until the liquid has been absorbed.
  4. To cook the chicken, preheat the oven to 180°C/gas mark 4. Place the chicken skin-side up in a roasting tray and bake for 45 minutes or until cooked though, turning once. The skin can then be blackened under the grill to finish, before serving with the rice and peas.
