Janet's prawn cocktail recipe

Janet Cripps' retro classic went down a treat on Come Dine With Me Folkestone and Dover

Serves 4

Ingredients

  • 200g mayonnaise
  • 100-150g tomato ketchup
  • 2 tbsp single cream
  • 110g frozen peeled prawns, thawed
  • 8 fresh king prawns
  • ½ iceberg lettuce, shredded
  • 1 lemon, cut into wedges
  • Sprigs of parsley
  • Brown bread fingers

Method

  1. In a bowl mix the ketchup, mayonnaise and cream, then season to taste.

  2. Wash and dry the prawns and lettuce then layer in serving glasses. Pour over the sauce and chill until needed.

  3. Serve with lemon wedges, sprigs of parsley and brown bread.
