Individual chicken parcel pies recipe

Nathan hoped he had victory all wrapped up with his chicken pie main on Come Dine With Me Folkestone and Dover

Serves 4

Ingredients

4 tbsp oil
500g chicken breast, diced
2 onions, chopped
100g pancetta, chopped
2 cloves garlic, chopped
Pinch of fresh thyme
Pinch of fresh rosemary
Good knob of butter
1 potato, finely diced
1 tbsp plain flour
400ml veg stock
Good dollop of clotted cream
500g shortcrust pastry
1 egg, beaten

Method

Heat half the oil in a frying pan and fry the chicken for 10-15 minutes until cooked through.
In a separate pan heat the remaining oil and fry the onions and pancetta until brown. Add the garlic, thyme, rosemary and the butter then season with salt and pepper. Add the potato and the flour and give a good stir before adding the chicken.
Stir well then gradually add the stock and stir. Simmer for about 30 minutes until thickened, then stir in the cream, remove from the heat and allow to cool. Once cooled chill until cold.
Preheat the oven to 200°C/gas mark 6. On a lightly floured surface roll the pastry out into discs and spoon the mixture into the centre. Fold the sides up and pinch at the top to seal. Secure with kitchen string.
Place the parcels on a baking sheet and brush the pastry with beaten egg. Bake for 20-30 minutes until golden brown.
