Homemade winberry ice cream with flambéed bananas recipe

Nick adds a little colour to his incredibly sweet dessert on Come Dine With Me East Lancashire

Serves 4

INGREDIENTS

Handful of winberries
290ml cream
290ml milk
2 egg yolks
100g caster sugar
50ml crème fraiche

For the flambéed bananas

4 bananas, halved lengthways
60g butter
125g brown sugar
4 tbsp brandy

METHOD

Blitz the winberries until smooth in a blender and softly whip the cream.
Bring the milk to the boil in a saucepan and whisk in the egg yolks, sugar, cream, crème fraiche and winberries.
Churn in an ice-cream maker according to manufacturer’s instructions then transfer to the freezer until firm.
For the bananas, heat the butter in a frying pan and add the bananas and half the brown sugar. Fry until softened and golden brown.
Add the brandy and carefully flambé. When the flame has died out transfer to serving dishes and serve with scoops of the ice cream and the remaining sugar scattered over.
