Guacamole and blue nachos recipe

Andy Bawtree kicked off with this Mexican themed starter of guacamole and blue nachos on Come Dine With Me Folkestone and Dover

Serves 5

Ingredients

  • 4 large fresh tomatoes, peeled and diced
  • 1 onion, chopped
  • 2 mild chillies, chopped
  • 2 large avocados, diced
  • Juice of 1 lemon
  • Small handful of coriander, chopped
  • Large packet of nacho chips
  • 2 red and green sweet peppers, chopped
  • 450g Danish blue cheese, crumbled
  • 225g soft blue cheese

Method

  1. In a bowl mix the tomatoes, onion, chillies and avocado. Drizzle with lemon juice and chill, then before serving mix in a little coriander.

  2. Spread the nachos in an ovenproof dish and scatter the chopped sweet peppers and cheeses over the top. Bake for 15 minutes or until cheese is nicely melted, then serve with the guacamole.
