Green Thai chicken and aubergine curry recipe

Wesley warmed his guests with this spicy Thai curry and fragrant rice on Come Dine With Me Enfield

Serves 4


  • 3-4 tbsp Thai green curry paste, or to taste
  • 3 x 400g cans coconut milk
  • 4 stalks lemongrass, each cut into three
  • 3 green chillies, chopped
  • 6 tbsp fish sauce
  • 6 tbsp palm sugar
  • Handful of fresh lime leaves, folded to release the flavour
  • 1 aubergine, diced
  • 4 chicken breasts, diced
  • Fragrant rice, to serve


  1. Add the curry paste to a large pan and heat on a low heat. Add the coconut milk, lemongrass, chillies, fish sauce, palm sugar and lime leaves, stir well and simmer for 15 minutes.

  2. Add the aubergine to the sauce and simmer for 15 minutes, then add the chicken and simmer for a further 15 minutes, or until the chicken is cooked through.

  3. Serve with boiled fragrant rice.
