Giant prawn cocktail recipe

Ian Carter kicked off with a retro prawn cocktail on Come Dine With Me Telford

Serves 4

Ingredients


For the sauce

  • 100g mayonnaise
  • Tomato ketchup, to taste
  • Juice of ½ lemon
  • 1 tsp horseradish
  • Few drops of Worcestershire sauce
  • Few drops of Tabasco sauce (optional)


For the dressing

  • Handful of fresh basil
  • 50ml olive oil

Method

  1. For the cocktail sauce, mix all the ingredients together in a bowl.

  2. For the dressing, blitz the basil and oil together in a food processor until smooth.

  3. Mix the smaller prawns and lettuce in a bowl then stir in ¾ of the cocktail sauce.

  4. Place a cooking ring on a serving plate and layer the cucumber around the inside. Spoon some lettuce mixture into the ring and press down gently. Carefully remove the cooking ring and repeat on each serving plate.

  5. Arrange the large prawns on top of each stack and decorate the plates with the remaining cocktail sauce and the basil dressing.
