For the dressing
For the cocktail sauce, mix all the ingredients together in a bowl.
For the dressing, blitz the basil and oil together in a food processor until smooth.
Mix the smaller prawns and lettuce in a bowl then stir in ¾ of the cocktail sauce.
Place a cooking ring on a serving plate and layer the cucumber around the inside. Spoon some lettuce mixture into the ring and press down gently. Carefully remove the cooking ring and repeat on each serving plate.
Arrange the large prawns on top of each stack and decorate the plates with the remaining cocktail sauce and the basil dressing.
