Preheat the oven to 220°C/gas mark 7. Cook the potatoes in boiling water, whilst lightly steaming the leaks over the top. When the potatoes are tender drain and mash.
Mix the cream and fish stock in a saucepan and bring to the boil. Place the fish in an ovenproof dish and pour the sauce over. Add the leeks, eggs and cheese and gently combine.
Boil the milk then work into the mash with the egg yolks. Spoon over the fish mixture and score the top with a fork to give a rough texture.
Bake for 20 minutes then brush the top with a little melted butter and serve with seasonal vegetables.
