Come Dine With Me

Fabulous fish pie recipe

Claire Oliver's main course is truly fabulous on Come Dine With Me Scarborough

Serves 4

  • 750g potatoes, cut into chunks
  • 1 leek, chopped
  • 225ml double cream
  • 600ml fish stock
  • 140g smoked haddock, diced
  • 200g salmon, diced
  • 70g king prawns
  • 2 hard-boiled eggs, chopped
  • 40g cheddar cheese, grated
  • 125ml milk
  • 3 egg yolks
  • 2 tbsp butter, melted

  1. Preheat the oven to 220°C/gas mark 7. Cook the potatoes in boiling water, whilst lightly steaming the leaks over the top. When the potatoes are tender drain and mash.

  2. Mix the cream and fish stock in a saucepan and bring to the boil. Place the fish in an ovenproof dish and pour the sauce over. Add the leeks, eggs and cheese and gently combine.

  3. Boil the milk then work into the mash with the egg yolks. Spoon over the fish mixture and score the top with a fork to give a rough texture.

  4. Bake for 20 minutes then brush the top with a little melted butter and serve with seasonal vegetables.

Please note this recipe is the contestant's own and has not been tested professionally. Like the Come Dine With Me contestants, you could be creating a culinary delight or dining disaster, so switch on your ovens and be bold.
