For the potatoes
Preheat the oven to 200°C/gas mark 6. For the potatoes, grease an ovenproof dish with garlic butter. Layer the potatoes in the dish, mix the water and cream and ladle over. Transfer to the oven and bake for 1 hour.
Split the chicken breasts down the middle to make a pocket in each. Stuff with the cheese then wrap in Parma ham.
Place the chicken in an ovenproof dish and bake for 20–25 minutes until the chicken is cooked and the juices run clear when tested with a skewer.
Meanwhile place the tomatoes in a roasting tray and roast for 10-15 minutes.
Scatter the rosemary over the potatoes and serve with the chicken, tomatoes, sauce and seasonal vegetables.
