Dundee Taylored chicken recipe

Derek Taylor served this stuffed chicken in his bid to win the prize on Come Dine With Me Dundee and Lothian

Serves 4

Ingredients

  • 4 skinless chicken breasts
  • 4 large slices Australian smoked cheese
  • 2 x 70g packets Parma ham
  • 500g small tomatoes


For the potatoes

  • Large knob garlic butter
  • 750g potatoes, sliced
  • 500ml double cream
  • 500ml water
  • Dried rosemary


To serve

  • Mushroom sauce
  • Seasonal vegetables

Method

  1. Preheat the oven to 200°C/gas mark 6. For the potatoes, grease an ovenproof dish with garlic butter. Layer the potatoes in the dish, mix the water and cream and ladle over. Transfer to the oven and bake for 1 hour.

  2. Split the chicken breasts down the middle to make a pocket in each. Stuff with the cheese then wrap in Parma ham.

  3. Place the chicken in an ovenproof dish and bake for 20–25 minutes until the chicken is cooked and the juices run clear when tested with a skewer.

  4. Meanwhile place the tomatoes in a roasting tray and roast for 10-15 minutes.

  5. Scatter the rosemary over the potatoes and serve with the chicken, tomatoes, sauce and seasonal vegetables.
