Chickin lickin soup recipe

Frank O'Hara plucked out this recipe for his starter on Come Dine With Me North Essex

Serves 4

Ingredients

  • Large knob of butter
  • 1 onion, chopped
  • 1 carrot, finely chopped
  • 2 cloves garlic, chopped
  • 2 x 500g packets chicken stock
  • 500g small pasta shells
  • 500g cooked chicken breas, shredded
  • 450ml whole milk
  • Mixed herbs, to garnish

Method

  1. Heat the butter in a large saucepan and fry the onion, carrot and garlic until soft. Add 1.2 litres of water, the stock and some salt and pepper.

  2. Add the pasta shells and chicken stock simmer for 4 minutes. Add the shredded chicken and milk and heat through for a further 5 minutes.

  3. Ladle the soup into bowls, scatter with the herbs and serve.
