Crumble the bread and place on a lined baking tray with half the brown sugar. Place until a hot grill until brown, then turn them over and sprinkle with the remaining sugar. Brown again then allow to cool.
In a saucepan simmer the cream with the vanilla essence for about 5 minutes, then cool the mixture quickly by placing the pan in freezing water.
Whisk the egg yolks with the whisky and in a separate clean bowl whisk the egg whites until quite firm. Fold the yolks into the egg whites.
Mix the cream, egg mixture and icing sugar together then add the cooled breadcrumbs. Pour into a container and freeze until firm.
