Wrap the steak in cling film and tenderise until about ½ cm thick. Place the flour and paprika in a bowl and mix. Cut the steak into thin strips then coat the steak in the flour mixture.
Heat the oil until hot and lightly fry the onion until soft. Place the butter and garlic into the pan and flash-fry the steak for 1-2 minutes. Add the apple juice and simmer until reduced, then add the mushrooms and soured cream.
Cook the tagliatelle according to packet instructions then drain serve with the stroganoff, garnished with parsley.
