Serves 4
Cook the risotto rice according to packet instructions.
Meanwhile heat some oil in a frying pan and brown the mince. Add the tomato puree, stir for a couple of minutes then add the red wine and peas. Simmer gently until the mince has absorbed all the liquid.
Spread the cooked risotto rice on a large plate and allow to cool.
Put the cooled rice back into a large bowl and mix in the mince mixture, 1 egg and the mozzarella and parmesan. Form the mixture into golf-ball sized balls and set to one side.
Fill three small bowls, one with flour one with 2 beaten eggs and one with breadcrumbs. In turn coat the risotto balls with flour, then egg and then roll in the breadcrumbs until completely coated.
Heat a deep pan of vegetable oil until a small piece of bread turns golden brown. Add the arancini and fry until golden brown, in batches if necessary. Remove and drain on kitchen paper before serving.
