Ingredients

  • 300g packet of Hob Nob biscuits, crushed
  • 75g butter, melted
  • 400g cream cheese
  • 100g caster sugar
  • 100ml Bailey's
  • 300ml double cream
  • 4 pieces of dark chocolate
  • 300g packet of Hob Nob biscuits, crushed

  • 300g strawberries, some reserved to decorate
  • 225g sugar
  • 100ml water

METHOD

  1. Mix together the biscuit crumbs and melted butter and press evenly into a 20cm springform cake tin. Use the base of a glass to remove air and pack the biscuit base then refrigerate for 30 minutes to set.

  2. Blend the cream cheese and caster sugar together and add the Bailey's. Whisk the cream in a separate bowl until it forms soft peaks. Fold the cream cheese mixture into the cream and pour the mixture over the base, levelling the top with a spoon. Grate the chocolate pieces onto the top and place in the fridge to set for 2 hours.

  3. To make the strawberry compote, place all the ingredients in a saucepan and simmer for 7 minutes. Stir and leave to cool completely.

  4. To serve, place a few strawberries on each plate, swirl the compote around the plate and place a slice of cheesecake on top.
