Sweet chilli lobster

Helen's third course was fresh lobsters baked with sweet chilli on Come Dine With Me Down Under

Serves 6

Ingredients

  • 3 lobsters, halved
  • 200ml sweet chilli sauce
  • 200ml honey
  • 2 cloves garlic, chopped
  • Pinch of paprika
  • Juice 1 lemon
  • 2 spring onions, chopped
  • 1 tsp grated root ginger
  • ½ red chilli, deseeded and finely chopped


To serve

  • Finely sliced spring onions and chopped parsley

Method

  1. Preheat the oven to 180°C/gas mark 4. Place the lobsters in a large roasting tray and cover with the remaining ingredients. Mix everything together thoroughly by hand.

  2. Cover the tray with foil and bake for 15 minutes. Scatter with the sliced spring onions and parsley to serve.
