Prawn and smoked salmon
Helen kicked off with a fishy salad starter on Come Dine With Me Down Under

Serves 5

Ingredients

  • 3 cucumbers, peeled and sliced thinly lengthways
  • 3 tbsp salt
  • 300g cherry tomatoes, halved
  • 2 avocados, diced
  • Juice of ½ lemon
  • 15 cooked prawns, peeled with tails left on
  • 5 small slices smoked salmon
  • Olive oil


For the tangy mayo

  • 4 tbsp mayonnaise
  • 4 tbsp sour cream
  • Juice of ½ a lemon

Method

  1. Place the cucumber on a plate, cover with the salt and set aside for 10 minutes, then remove the excess water and salt with kitchen paper.

  2. Toss the tomatoes and avocado in a bowl with a squeeze of lemon and in a separate bowl mix together the mayonnaise, soured cream and lemon juice for the tangy mayo.

  3. Spoon a small amount of the tomato and avocado mixture onto each serving plate. Top with a spoonful of mayonnaise, followed by the cucumber. Sit the prawns and salmon on top, drizzle with olive oil and lemon and serve.
