For the tangy mayo
Place the cucumber on a plate, cover with the salt and set aside for 10 minutes, then remove the excess water and salt with kitchen paper.
Toss the tomatoes and avocado in a bowl with a squeeze of lemon and in a separate bowl mix together the mayonnaise, soured cream and lemon juice for the tangy mayo.
Spoon a small amount of the tomato and avocado mixture onto each serving plate. Top with a spoonful of mayonnaise, followed by the cucumber. Sit the prawns and salmon on top, drizzle with olive oil and lemon and serve.
