Waffles with ham and eggs recipe

Simon Rimmer’s homemade waffles will go down a treat topped with ham, eggs and a creamy chilli sauce

Serves 4

Ingredients

  • 375g plain flour
  • 1 tsp baking powder
  • 25g caster sugar
  • 70g unsalted butter, melted
  • 2 eggs
  • 375ml whole milk


To serve

  • Oil, for frying
  • 4 thick slices roast ham
  • 4 eggs
  • Chilli sauce mixed with mayonnaise
  • Chives, to garnish

Method

  1. Sieve the flour, baking powder, caster sugar and salt and pepper together in a bowl. In another bowl whisk the butter, eggs and milk together, then combine with the flour.

  2. Spoon onto a greased waffle iron and cook for 3-4 minutes until golden.

  3. Meanwhile in a frying pan, fry the ham in a little oil to warm it through.

  4. To poach the eggs in a different way, put the whole eggs into a pan of boiling water for 20 seconds, then lift out and transfer to iced water. Now crack them back into the boiling water and they should be perfect poached eggs as they’ve started to set before breaking, cook for 2 minutes and drain on some kitchen roll.

  5. Serve the ham, eggs and chilli sauce on top of the waffles, garnished with chives.
