This classic limoncello from Kirstie's Home for Christmas will last 6 months
Makes 2.3 litres
Remove the rind from the lemons avoiding the white pith. Put the zest in a large pan with the sugar and 650ml water. Heat gently until the sugar dissolves, then turn up the heat and simmer for 15 minutes.
Remove from the heat, squeeze the juice from lemons and add to pan with the vodka. Cover and leave to infuse for a week.
Strain into a large jug through a sieve lined with muslin or kitchen paper. Decant into sterilised bottles and put a pretty label on. Once bottled, the limoncello should last for 6 months.
