Rabbit schnitzel recipe

Trevor: "This inspired recipe shows what you can do with great fresh produce, a little bit of imagination oh yeah and a fully stocked kitchen! There is no denying that the finished article was delicious though and also very easy to make at home."

Serves 4

Ingredients

  • 4 boned rabbit legs
  • Plain flour
  • 2 eggs, beaten
  • Handful of breadcrumbs
  • Knob of butter
  • Mashed potatoes, to serve

Method

  1. Wrap the rabbit legs in cling film and beat with a rolling pin until flat.

  2. Dip them into the flour, then the egg, followed by the breadcrumbs.

  3. Melt the butter in a hot pan and fry the rabbit until golden and crispy.

  4. Serve with mashed potatoes.
