Toasted curried banana sandwiches recipe

It might sound like a crazy combo, but it was a hit for Heston on his 80s Feast. Next time you have leftover takeaway knocking around, be brave and give this curried banana toastie a go

Ingredients

  • 4 slices bread, buttered
  • 1 banana, peeled
  • 2 tablespoons leftover curry (any sort - Madras, vegetable etc)

METHOD

How to make toasted curried banana sandwiches

1. Butter the outsides of the bread and place two slices, buttered side down in the sandwich toaster.

2. Cut the banana in half and cut each half lengthways into 3 slices. Thinly spread curry over each slice of bread. Place three banana slices on the curry. Thinly spread the remaining curry over the banana.

3. Top with the remaining slices of bread (buttered side up). Toast for 2 minutes.

Tip: Sprinkle a teaspoon of sugar on the buttered side of your toastie to make it more crisp, especially if you are using sweet fillings.
