Muscovado brandy butter
Christmas pudding wouldn't be Christmas pudding without brandy butter, so give it the respect it deserves! This homemade brandy butter will be the perfect end to your Christmas feast.

Serves 6-8

Ingredients

  • 100g unsalted butter
  • 80g unrefined light muscovado sugar
  • 2-3 tablespoons brandy

METHOD

How to make muscovado brandy butter

Put 100g unsalted butter (at room temperature) into a bowl and beat until creamy and white. Add 80g unrefined light muscovado sugar, a little at a time and beating well with each addition. Then beat in 2-3 tablespoons brandy (depending how boozy you like it). At first it will seem like the brandy won't amalgamate but it will become a smooth butter.
