Add some life to a bowl of new potatoes with this zingy mustard and honey dressing. Serve as a BBQ side dish with spicy barbecued meats
1. Bring a large pan of water to the boil. Add potatoes, bring back to the boil, then simmer gently for 12-15 minutes or until just tender.
Do not peel Jersey potatoes, simply rub any flaky skin gently from the surface. Always put Jersey Royals straight into boiling water to seal in the flavour.
2. Meanwhile, heat together the honey, butter and mustard in a small saucepan, stirring until well blended. Add lime juice.
3. Drain cooked potatoes. Pour honey glaze over and gently toss potatoes in the saucepan until evenly coated. Serve hot or warm, garnished with chopped coriander.
