Never think a burger is just a burger. In this BBQ dish the apple inside the pork and apple burgers with blue cheese stops the meat from becoming dry and the blue cheese gives a contrasting tanginess. Perfect for that summer barbecue

Ready in 25 minutes
1. Tip the mince into a large bowl. Core and finely dice the apple, then add to the pork along with the paprika. Season, then mix well with your hands. Shape into 4 round burgers, flattening them slightly.
2. Brush a griddle or frying pan with a little oil and place over a medium heat. Add the burgers and cook for about 12 minutes, turning halfway, until browned and cooked through. Set aside to rest.
3. Brush the cut side of each bun with oil, then griddle each cut side for a few minutes until toasted.
4. Put some salad leaves on 4 bun bases. Top with a burger, then a slice of cheese. Sandwich together with the bun tops. Serve with coleslaw and oven chips.
Tip: Preheat your barbecue in the usual way until it reaches the correct temperature. Cook turning once, bearing in mind you may have to adjust the cooking time slightly depending on how hot your barbecue is or how near the heat source the food is placed.

An inexpensive Rhône red will add a nice peppery note, or wash it down with a premium cider.
