Simple yet so blooming delicious. This cauliflower cheese recipe tastes delicious with a Sunday roast
Serves 4
Preparation time 30 minutes, cooking time 15 minutes
Suitable for vegetarians
1. Preheat a low grill. Put 4 individual heatproof dishes or one large baking dish in the grill compartment, to warm.
2. Cook the cauliflower in a large saucepan of simmering water for 10-12 minutes, until tender.
3. Whilst the cauliflower is cooking, put the milk, flour and butter into a non-stick saucepan. Cook over a medium heat, stirring constantly with a small whisk, until the sauce is thick and smooth. (This is the easiest way to make a sauce). Remove from the heat and add most of the cheese, the mustard (if using) and pepper. Stir until the cheese has melted.
4. Drain the cauliflower thoroughly and place it in the warm dishes. Turn up the grill heat to high. Pour the sauce over the top and sprinkle with the remaining cheese. Grill for 3-4 minutes, until lightly browned. Serve at once sprinkled with chopped parsley.
Tip: Serve with crusty bread to mop up the cheese sauce. Another time, try cauliflower and broccoli cheese, by using equal quantities of cauliflower and broccoli.
