Mexican style baked beans recipe

Just a little variation on the old American favourite

Serves 8

Cooking time: 30 minutes

Setting time: 10 minutes


  • 1 tsp vegetable oil
  • 65g chopped onions
  • 60g brown sugar
  • 420g Mexican-seasoned pinquito beans
  • 420g pinto, black, or navy beans, drained
  • 250g barbecue sauce
  • 120g ketchup
  • 3 tbsp molasses
  • 15g coriander
  • Salt and pepper


How to make Mexican style baked beans

1. In a pot combine oil, onions, and brown sugar. Cook for 1 minute. Add the beans, barbecue sauce, ketchup, and molasses.

2. Cook on medium heat until mixture begins to boil. Turn heat to low, add the coriander. Stir in the salt and pepper to taste.

3. Cook on low for 30 minutes, covered. Let sit for 10 minutes before serving.

Tip: for a healthier version, omit brown sugar and molasses. Use 240g sugar-free ketchup in place of regular ketchup.
