Curried egg and lentil sandwich recipe

This hearty sandwich from River Cottage is packed with a punch


Hugh: "Lentils in a sandwich? Why not? The curried mayonnaise and egg hold them nicely, giving you a lovely textured mouthful. Include the raisins for a little fruity sweetness."

Serves 2

Ingredients

  • 2 hard-boiled eggs
  • 1 tsp curry powder
  • 1 tbsp mayonnaise
  • 2 tsp crème fraiche
  • 3 tbsp puy lentils, cooked and cooled
  • 1-2 tbsp raisins
  • Good quality artisan white bread, e.g. pain de campagne
  • Small handful of flat leaf parsley

Method

  1. Roughly chop the egg and place in a bowl. Add the curry powder, mayonnaise, crème fraiche, lentils and raisins, and season to taste. Give everything a good stir to combine.

  2. Butter four slices of bread and spread mixture on top of two slices of bread, add some parsley with tough stalks removed and finish with a slice of buttered bread. Cut into halves and serve.
