Heston's 'sausage on a stick' lickable wallpaper

Lickable wallpaper was a Wonka-inspired amuse bouche on Heston's Chocolate Factory Feast. Get decorating with Heston's sausage on a stick recipe.

Ingredients

For the sausage oil breadcrumbs

  • 50g butter
  • 150g grapeseed oil
  • 4 jumbo pork sausages
  • 200g dried breadcrumbs

For the lickable sausage mix

  • 175g sausage oil breadcrumbs (see above)
  • 1g rosemary
  • 9g pork stock cubes
  • 2g chicken stock cubes
  • 0.3g ground nutmeg
  • 0.2g ground ginger
  • 0.2g freshly ground white pepper
  • 0.8g red cocoa colouring
  • 1.2g black cocoa colouring

For the wallpaper gel base

  • 100g brown chicken stock
  • 16g strong beef stock
  • 25g golden syrup
  • 2.2g Worcestershire sauce
  • 1g salt

To finish the gel

  • 74g wallpaper gel base mixture (see above)
  • 2g pectin jaune
  • 2g caster sugar

METHOD

How to make 'sausage on a stick' lickable wallpaper

To make the sausage oil breadcrumbs

1. Melt the butter in a sauté pan with the grapeseed oil and fry the sausages over a high heat for 5-10 minutes until well caramelised.

2. Strain the oil through a sieve and reserve (discard the sausages). Heat the sausage-infused oil to 150°C. Add the breadcrumbs and fry until golden brown. Drain on kitchen paper and place in a dryer overnight to get rid of any excess oil.

To make the lickable sausage mix

3. Blitz all of the ingredient together in a food processor and pass through a drum sieve. Place on kitchen paper in a dryer and dry overnight.

To make the wallpaper gel base

4. Whisk the ingredients together thoroughly and weigh out 74g.

To finish the gel

5. In a small saucepan, bring the base mixture to 80°C. Mix the pectin and sugar together and add to the pan.

6. Bring the mixture to the boil while whisking, then remove from the heat and cool.

To serve

7. Cut a stencil of a cocktail sausage out of a piece of thin rigid plastic material.

8. Brush the gel onto a wall using the stencil and a stencil brush.

9. Using a tea strainer, dust over the lickable sausage mix evenly. When it is dry, flatten with the back of a spatula and carefully lift off the stencil.
