Peel and quarter the potatoes. Pour over boiling water from the kettle and simmer for 8-10 minutes.
Heat the goose fat in a large roasting tray on the hob. While the goose fat is coming up to temperature drain the potatoes. While they’re still in the colander sprinkle over the semolina and then bash them about to roughen up the edges.
Tip the potatoes into the hot goose fat, shake to coat with the fat, season with salt and pepper and then place in the oven.
Roast at 180°C/gas mark 4 for 5 minutes or until the turkey comes out of the oven. Turn the oven up to 220°C/gas mark 7 for 30 – 40 minutes or until the potatoes are golden and cooked through. Be sure to turn occasionally to get the best results.
